A stock type engine as you call it should not need to idle at 1300 rpm, you have a vacuum leak taking place somewhere when the motor is up to temp, or the mechanical advantage shaft or weights are hanging up the timing as stated in the above reply. Those heads will fill your needs very nicely and with a usable power band up to 6K should not require a bunch of rear gear. You should run a Cam of .550" lift and one that makes good usage lobe center and overlap wise to those heads greater Exh flow numbers. With .550" lift you should be accessing 2...

To keep from having a corrective valve job done I get guide liners put in and hopefully get them Diamond honed to size, if not then ball honed.

Yes, you should have.
That coating is just for corrosion protection and it will load up in the bearings and deter oil from clinging to the lobes and journals.

By the way the term is DOHC, not DOCH.

Surly this is not the whole story with these seat to lift recommendations posted above!

They have to be tempered with looking at how efficient the level of port air flow stays in relation to its minimum port area

Wow! That motor with those heads are way way undervalved even just considering a 4” bore size, no less the stock 4.250” bore size! The 30 degree change is a good up grade for your motor and it’s intended use, especially since with the Cam your running being done by 4500 rpm you will not have overlap...
