5.6 AFR on methanol is lambda 0.88. 6.1 AFR on methanol is lambda 0.95. SBC's will run leaner on meth than a big block anything so reading any plugs other than NGKs will be difficult as you state. NTK or Bosch O2 sensors? Do the O2 sensor modules (if present) have a calibration routine in free air? (Autometer/Stack wideband controller does, not sure about any others) If the same O2 difference is present after swapping O2s side to side, jet up the lean side and see what happens - mph will tell...

I don't think a gixxer 1000 is allowed in Extreme Kross Kart. The other two numbers for runs 128 and 130 are the 750.
