Then why would adding two quarts of oil bring the pressure up from 20 to 40? I did take the filter with me. Even though pretty submerged, without a pickup the pump pulls down/in a mini whirlpool(opposite rotation down under?) even at idle, replenishing the 2 satisfied it at idle but still wouldn't ...

The current thermostat is good and would eventually open, it's just that by the time enough heat is conducted to it in a non-circulation/no bypass cooling system, things will be really cooking elsewhere.
