Timing Set Question... single vs. double roller

I have a 99.9% new timing set I pulled out of a SBM that never ran a mile. The guy replaced the timing set and started the engine but never drove it..sold the car w/o the engine. Not sure of the brand... iron cam sprocket. Nothing fancy.
I would use this thing in my project engine (SBM)... I have a shop that tells me single row chains are fine but double rollers are what sells.
I've likely assembled more engines without double rollers... I'm old enough to remember not having them invented being yet. Chevys, Fords Mopars... never used them.
I know I'll get gruff if I cheapen out on the timing set... my preference is an SA with an IWIS chain. Used a few of those.
But really... how many timing sets have you seen fail in an engine that gets pulled apart every off season?
