Curious as to the step, but as far as the radius / exhaust port, packing trumps power in this application.
The radiator sits just in front of the header and the wheel / tire is very close to the radiator.
These applications make more power than they can put down. At most road race tracks, a Superbike is “all in” power wise maybe 10-15% of the lap. Losing some peak power to make the bike more compact, aerodynamic, and focus handling overrules some power gains by fixing the exhaust port exit.

Looks like a ramp to help steer / promote tumble. Looks a lot like you see in the Honda white papers with their other contemporary designs (like the new NSX engine).
This engine is 220hp/L from the factory. Emissions legal, pump gas, etc.
