Pistons I found show they are intended for a 3.50 stroke but I’m using a stock 3.480 crank. What will be the difference with me using those pistons on a stock crank?

Just deck the block. You would probably be doing it anyway.

That piston will be .010 further down the cylinder and a little less compression unless you deck the block or use a thinner head gasket.

You really need to know the CP height of the piston to understand where you stand.

Some "factory" pistons set down in the hole already... Very rare to have zero deck with stock pistons.
