can I take a seat from a gen 6 Camaro and just wire 12V to it to put the seat in an older car?

Not done that exact swap, but have done similar. Caveat is some recent seats have an airbag in the door-side of the backrest. Do your research, as that is essentially a bomb which will explode if the right wires are given voltage. Other seats have one hot wire for power adjustment and another for heated seat bottom.

Yes. Unless it has memory seat, in which case you'll also need the memory seat module (mounted under the seat cushion). The drivers B+ Red/Yel wire is hot at all times with a 30A fuse. Passenger seat B+ wire is Red/Gray.

Any airbag can be unplugged. There is a shorting bar that shorts the two wires together that could otherwise blow the bag. If someone were to try to apply voltage to the connectors, the shorting bar will keep the current from flowing to the propellant. Of course, the problem with making something idiot proof is that they keep coming up with smarter idiots.
